Winemaking : An attractive and buttery white wine, this Vin de France is produced to fealure the fruit characteristics from our vineyard. Pressed into an underground tank (typical from nantais vineyard) for fermentation. Primary fermentation (sugar to alcohol) about 2-3 weeks with a secondary fermentation “malo-lactic” in which tart-tasting malic acid, naturally present in grape must, is converted to softer-tasting lactic acid in order to maintain the crispness in the wine. The wine is aged on lees for 9 months before bottling.
